    Bread That Might Just Be Better for You - Recipe and Tips

    For the average, everyday shopper, the stashes upon stashes of bread literally baked on the shelves at supermarkets seem to be getting jam-packed with more options. Gluten-free, wheat-free, low-carb, reduced sugar, more protein, fewer grains, more grains. What exactly is one supposed to choose?

    The fact is, a lot of gluten-free breads are extremely processed, fortified, high in grains and carbs. The manufacturers of these sorts of breads saw a market and went for it, without putting too much care into a seemingly “heathy” alternative.

    Low carb bread, on the other hand, is growing in popularity amongst shoppers. Take note, however, when you cut back on your intake of carbs, you may experience some of the following effects:

    1. A quick loss of water weight before anything else.
    2. You may become subject to the low-carb flu as your glycogen stores get low and your body starts to get its fuel from ketones (a process whereby your body relies on its own stores of energy and starts to process fat for fuel instead).
    3. A reduction of energy levels, especially through consumption of fewer wholegrains.
    4. Fibre helps keep you regular, in particular through wholegrains often found in bread.
    5. You could get a little moody due to the decrease of your brain’s levels of serotonin, which is found in carbs.

     

    To save you scouring the supermarket shelves in hunt of your sought-after low carb loaf, why not have a go at making it for yourself. Low-carb baking does require some specialised ingredients and a little patience at first to get it right. However, once you master the art of baking low-carb, you might just be happy with the outcome.

    Here’s a recipe below that we found on Diet Doctor. A low carb loaf, without sugar or starch, with a warming seasoning just perfect for the cooler winter weather. Enjoy!

    Low Carb Holiday Bread

    Ingredients:

    • 2 cups almond flour
    • 8 tablespoons coconut flour
    • 513 tablespoons sesame seeds
    • 513 tablespoons flax seeds
    • 4 tablespoons ground psyllium husk powder
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 2 tablespoons holiday bread seasoning, recipe below
    • 6 eggs eggeggs
    • 1 cup sour cream
    • 90 g cream cheese

     

    Holiday bread seasoning

    • 2 tablespoons ground cloves
    • 1½ tablespoons ground bitter orange peel
    • 1 tablespoon fennel seeds
    • 2 teaspoons anise seeds
    • 2 teaspoons ground cardamom (green)

    Method

    Instructions are for 22 servings. Please modify as needed.

    1. Preheat your oven to 200 Celsius. Mix all dry ingredients in a bowl.
    2. Mix eggs, sour cream and cream cheese in a separate, larger bowl.
    3. Add the dry mixture to the wet and mix it smooth.
    4. Pour the mixture into a well-greased and paper-lined bread tin. Bake in the lower part of the oven for about 60 minutes.
    5. A skewer poked in the middle of the bread should come out clean when it’s done. Take the bread out of the oven and remove it from the tin and place on a rack to cool. If you leave it in the tin, the bread might go soggy.
    6. Serve it with butter and your favourite festive toppings.

    Tip!

    This bread tastes its best fresh or toasted. Slice the bread that you don’t finish the same day as baking it, and keep in the fridge for 2-3 days or in the freezer where it will keep for about a month.
